Strawberry and White Chocolate Cupcake

Spring has arrived! The sweet smell of jasmine is in the air and the world is a little greener.

And what better way to celebrate than with bright coloured cupcakes with a strawberry and white chocolate flavour.  As sweet as Spring jasmine, the Strawberry and White Chocolate Cupcakes are a real treat!

The warmer weather means more strawberries in store and this makes me really happy! This said, I am not a fan of bits of fruit in cupcakes so I cheated. I used pink strawberry flavoured milk in my cupcake mix as a substitute for the liquid required for the batter. The result was bright pink cupcakes and a delicious strawberry aroma.

Mixing chunks of white chocolate into the icing creates bursts of chocolate delights. You definitely taste the white chocolate which was my goal!

I’m a lazy baker so I used a cake mix that called for milk, egg and oil. I followed the directions using my pink milk and baked according to the recommended time. However, if you’re looking for a reliable and delicious vanilla cupcake recipe, here is my favourite (for my not so lazy days!).

Here’s wishing you a happy Spring, filled with sunny days. Time to return to the outdoors, have picnics, invite friends over for a meal and indulge in something sweet.

Basic Vanilla Cupcake Recipe

1 ½ cups flour
¾ cup sugar
2 tsp baking powder
½ tsp salt
½ cup milk (for strawberry flavour, substitute with strawberry milk)
½ cup oil
2 eggs
1 tsp vanilla essence

  1. Sift dry ingredients together.
  2. Add wet ingredients to the dry ingredients and beat well until smooth and creamy.
  3. Place paper cups into muffin tin and fill each cup 3/4 full.
  4. Bake for 15 minutes at 180° C.


  1. Cream together 125g margarine and 125g icing sugar.
  2. Add shavings of white chocolate
