Summer is almost here. I say almost because we’ve all been experiencing some rather strange weather. Warm summer nights under the stars call for a fresher, lighter burger. We often go bun-free and just eat the burger with a generous topping. I love the combination of fruit and chicken as a burger option. The sweetness of the papaya balances the crunchy onion and bite of the chilli. I’ve added mint to add a little bit of refreshment. You can add more or less chilli depending on your personal taste.

This salsa doesn’t keep well and is best eaten within a few hours of making.

Papaya salsa burger

 

Papaya Salsa

1 medium sized papaya
1 red onion chopped finely
1/2 red pepper chopped finely
1 small red chilli chopped
1 tbsp. of fresh mint chopped
1 tbsp. olive oil
1 tsp salt
1tsp sugar
60ml white wine vinegar

Mix together the papaya, onion, red pepper, chilli and mint. Whisk together the olive oil, salt, sugar and vinegar. Pour the liquid over the papaya mixture and allow to rest for 30 minutes allowing the flavours to develop.
