As fennel season comes to an end, I realise that I missed the opportunity to combine fennel with a burger. To rectify this, I decided to try something new with the last of the season’s bulbs. Coming into season is pomegranate and I thought the two combined would be pretty good. Turns out I was right! The tartness of the fennel and the sweetness of the pomegranate combine beautifully with the chicken for a light and refreshing burger.
You can make your own chicken patties or you can use pre-made ones. It really depends on what is easier for you
Chicken Burger with Fennel and Pomegranate:
2 baby fennel bulbs or 1 large fennel bulb
1 tbsp. lemon juice
1 tbsp. olive oil
salt and pepper
Thinly slice the fennel and place in a bowl. Drizzle with the olive oil, lemon juice and season. Toss well and allow to stand for 30 minutes.
250ml pomegranate juice
3 tbsp. honey
1/2 cup pomegranate seeds
1 tsp lemon juice
In a small pot, over low heat, heat the juice and honey and cook until syrupy. Add the pomegranate seeds and lemon juice. Allow to cool.
Assemble your burger adding generous servings of the fennel salad and pomegranate relish.
