I realise that leftover boerewors may be a strange concept to many. But let’s face it, sometimes it’s good to put a little extra on the braai so that you can use it for a lunch the next day. This salad is also great as part of a braai especially if you want something substantial to eat before the main event.
The flavour of Championship boerewors comes through nicely, while the harissa and nectarines balance each other beautifully. If you’re worried about the harissa being too hot, I recommend making a harissa mayo. It’s milder and you don’t lose out on the spicy flavour.
Boerewors, Nectarine and Quinoa Salad
1kg boerewors, cooked
3 Nectarines, chopped
2 cups quinoa, cooked
2 tbsp. harissa paste
2 tbsp. coriander
In a bowl, mix the harissa paste with the boereowors. Add the nectarines and cooked quinoa. Garnish with the fresh coriander.
Serve and enjoy!
