TGIBN – Black and Blue Burgers {Recipe}

I heard about Black and Blue Burgers and the name alone intrigued me.  I was keen to make them for one of our burger nights.  Black refers to the black spice and blue refers to the lovely blue cheese layer in the middle.

As we only had Ostrich mince in the fridge, I decided it would be a great experiment. Blue cheese and ostrich go so well together!

Black and Blue Burgers (serves 4)

Blackening Spice

1tsp Paprika
1tsp Dried Thyme
1tsp Black Pepper
1tsp Dried Basil
1tsp Dried Oregano

Mix all the ingredients together.
(if you don’t have time to make the spice, you can use Cajun Spice)


500g ostrich mince
1/2 red onion, chopped
30ml breadcrumbs
125g blue cheese, thinly sliced

Mix the mince, onion and breadcrumbs together. Make thin burger patties (aim for at least 8). Place the slice of cheese on top of a patty, then place another patty on top of the cheese. Pinch the sides together to create one patty. Coat the patties with the spice.

Grill burgers for 3-4 minutes a side. Do not smash your burgers – you want to retain their shape and prevent the cheese from oozing out.

Burger ingredients

Toasted White Roll
Wholegrain Mustard

Assemble your burger, spreading mustard on the inside of the top half of your burger.
